Can't really tell with Television Industry. If HBO thinks GoT is still profitable after 2 more years, then they'll pay the producers even more to stretch the story upto 10 seasons!!!

HBO has the majority rights now so sadly the author doesn't have the final word on what appears on TV.
We'll have to see how the upcoming season turns out, because the author was not pleased with all the changes in S05.

He once said that it is fictional story so the changes are imminent between book and TV versions.

There may be 7 books, but they can spread the story so it fits more seasons.
Hopefully, they don't dilute it just t make profit.
