Because you don't know where your data physically is being stored. And your data is stored at multiple locations and provided to you from the most suitable location to you

And to backup your data you would probably use Google Drive. And Google Drive is just and integration on WhatsApp, it is no way concerned to WhatsApp. WhatsApp doesn't use its own server space to backup, it's all stored on Google's.
